Abstract: The synthetic process of acylated cyanidin-3-glucoside catalyzed by enzyme was optimized through single factor experiment and response surface analysis according to the degree of conversion, and the product was identified by HPLC-MS and NMR. The optimum conditions were as follows: 41 ℃,-90 kPa, 43 mg·mL-1 enzyme applied, concentration of cyanidin-3-glucoside 10 mg·mL-1, concentration of methyl benzoate 0.4 g·mL-1, reaction time 24 h. The structures of acylated cyanidin-3-glucoside products were identified as 3-(6″-benzoyl)-glucoside.

Key words: cyanidin-3-glucoside, benzoylation, lipase
