Abstract: The allele and genotype frequencies of uncoupling protein 3(UCP3) gene in Chalu black pig (56),Jiaxing black pig (50) and Pietrain × Chalu black pig(10) were detected by PCR-RFLP method. The carcass and meat quality traits in 21 pure Chalu black pigs were measured. Then the relationship between the genotypes of UCP3 and the traits above were analyzed using the general linear model. The results showed that UCP3 gene had significant effects on the carcass length, shoulder back fat thickness,waist-straw combining back fat thickness and average back fat thickness, and also the L value,pH of leg muscle, eye muscle temperature and eye conductivity as well.

Key words: Chalu black pig, UCP3 gene, carcass traits, meat quality traits
