Condition optimization of the neutral protease hydrolyzing turtle protein into antioxidant activity peptides

Abstract: Antioxidant activity peptides was prepared with turtle as raw material. In order to optimize the enzymatic hydrolysis condition of turtle protein, based on the singlefactor experiment, a mathematics model has been established by Response Surface Methodology (RSM), and the validity of the model has been validated. Results showed the better antioxidant activity peptide were obtained when the hydrolysis temperature was 5065℃, pH at 748, catalyzer addition was 29%. In above optimized condition, the DPPH cleanup rate and DH were reached to 8556%±152% and 768%±052%, respectively.
