双酶分步酶解蚕蛹蛋白及其产物抗氧化活性的研究

摘要:

以蚕蛹蛋白作为原料,选择出一种中性蛋白酶,与酸性蛋白酶结合,组成复合蛋白酶对蚕蛹蛋白进行了联合分步酶解。从总抗氧化能力、清除DPPH·能力、抑制羟基自由基能力、抗超氧阴离子自由基能力等方面分析了酶解产物蚕蛹蛋白肽的抗氧化活性,表明混合蛋白酶分步水解蚕蛹蛋白所得产物具有良好的抗氧化活性。

Abstract: We chose a kind of neutral protease using silkworm pupae protein as materials, combined it with a kind of acid protease, and optimized the combine hydrolyzing sequentially. The antioxidant activities of silkworm protein was analyzed by TAOC, DPPH·scavenging rate,·OH inhibition ability and the superoxide anion inhibition ability. The results showed that the hydrolyzates products had favorable antioxidant activities.
