Effects of composite film on cucumber's physiological changes during storage

Abstract: Using different concentrations of chitosan, methylcellulose and single glyceride, different ratios of chitosan composite membrane coating were made to study the physiological changes of cucumber based on the orthogonal experiment of L9 (33). The results indicated that chitosan composite membrane characteristic was good, which could effectively maintain the cucumber sensory quality, reduce weightlessness lose, respiratory intensity and hardness of cucumber, and could also inhibit the loss of soluble solid and chlorophyll content. The preservation effect of chitosan achieved the remarkable level. Optimized concentration of the chitosan composite film was the ratio of 2.0 % chitosan, 0.2 % single glyceride and 0.2 % methylcellulose.
