Abstract: Spinach were packaged with diferent thickness of polyethylene films(0.010,0.025,0.040 and 0.025 mm +anti-condemafion component,with no film packaging as contro1)and stored at(2±0.5)℃.The physiological and biochemical changes in spinach during low temperature storage were studied.The results indicated that spinach packaging with 0.025 mm+ anti—condensation component film could maintain the best quality.It not only reduced the respiration rate,MDA content,and cell membrane permeability,but also kept the level of chlorophyll content and protein content in spinach,which resulting in prolong of the storage period and shelflife.However,there was no clear difference in water loss rate in spinach among packaging with different thickness of films.
